Ingredients

2 chicken breasts

2 cups broccoli florets

12 oz pasta (penne or rigatoni)

1 ½ cups heavy cream

1 cup freshly grated parmesan cheese

3 garlic cloves, minced

2 tablespoons butter

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a skillet and cook chicken 5–7 minutes per side until golden and done. Remove and let rest.

3. In a large pot, boil pasta in salted water. Add broccoli florets in the last 3–4 minutes. Drain and set aside.

4. In the same skillet, melt butter and sauté garlic until fragrant (1 minute).

5. Pour in heavy cream and let simmer 3–4 minutes.

6. Stir in parmesan cheese until smooth. Season with more salt and pepper to taste.

7. Add pasta and broccoli to sauce and toss well.

8. Slice chicken and place on top. Garnish with parsley and serve hot.

Notes

Let the Alfredo sauce simmer gently so it thickens without curdling.

Add a splash of pasta water if the sauce needs loosening before serving.
