Ingredients

3 cups cubed butternut squash

2 cups chopped apples (Honeycrisp or Fuji)

3 tablespoons maple syrup

3 tablespoons melted butter

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1 tablespoon fresh thyme leaves

1 cup crushed cornflakes or panko breadcrumbs

1 tablespoon melted butter (for topping)


Instructions

1. Preheat oven to 375°F (190°C).

2. Peel and cube the butternut squash. Core and chop apples into bite-sized pieces.

3. In a large bowl, toss squash and apples with 3 tbsp melted butter, maple syrup, cinnamon, nutmeg, and salt.

4. Spread mixture evenly in a greased casserole dish.

5. In a separate bowl, combine cornflakes (or panko), 1 tbsp melted butter, and chopped thyme.

6. Sprinkle topping evenly over the casserole.

7. Bake uncovered for 35–40 minutes until squash is tender and top is golden.

8. Serve warm with extra thyme garnish if desired.

Notes

For extra crunch, sprinkle chopped pecans into the topping.

You can prep the squash and apples a day ahead to save time.
