Ingredients

1 1/2 cups apple cider (reduced to 1/2 cup)

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1/2 cup milk

1/3 cup unsalted butter (melted)

1 teaspoon vanilla extract

4 tablespoons melted butter (for coating)

1/2 cup granulated sugar (for coating)

1 tablespoon cinnamon (for coating)


Instructions

1. Simmer apple cider over medium heat until reduced to 1/2 cup, then cool.

2. Preheat oven to 350°F and prepare a 12-cup muffin pan.

3. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

4. In a separate bowl, mix brown sugar, granulated sugar, egg, milk, melted butter, vanilla, and reduced cider.

5. Gradually combine dry mix with wet ingredients until just combined.

6. Fill muffin cups evenly and bake for 16–18 minutes.

7. Cool muffins slightly, then brush with melted butter and coat in cinnamon sugar mixture.

Notes

Reducing the cider is key—don’t skip it or you’ll miss the concentrated apple flavor.

These are best eaten fresh, but you can freeze them uncoated and rewarm before adding cinnamon sugar.
