Ingredients
2 cups diced apples (peeled or unpeeled)
1/2 cup brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tbsp butter
1/2 tsp vanilla extract
6 small flour tortillas
3/4 cup granulated sugar
3/4 cup water
2 tbsp additional butter (for syrup)
Optional: pinch of salt, raisins, chopped nuts
Instructions
- In a skillet, melt 2 tbsp butter over medium heat. Add apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until soft.
- Stir in vanilla extract and remove from heat. Let cool slightly.
- Spoon apple mixture into tortillas, roll them tightly, and place seam-side down in a greased baking dish.
- In a saucepan, combine granulated sugar, water, and 2 tbsp butter. Bring to a boil, then simmer for 3–4 minutes.
- Pour syrup over the enchiladas and let soak for a few minutes.
- Bake uncovered at 350°F (175°C) for 20–25 minutes until golden and bubbling.
- Let cool slightly before serving. Top with extra apples, whipped cream, or ice cream if desired.
