Ingredients

2 cups diced apples (peeled or unpeeled)

1/2 cup brown sugar

1 tsp ground cinnamon

1/2 tsp ground nutmeg

2 tbsp butter

1/2 tsp vanilla extract

6 small flour tortillas

3/4 cup granulated sugar

3/4 cup water

2 tbsp additional butter (for syrup)

Optional: pinch of salt, raisins, chopped nuts


Instructions

  1. In a skillet, melt 2 tbsp butter over medium heat. Add apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until soft.
  2. Stir in vanilla extract and remove from heat. Let cool slightly.
  3. Spoon apple mixture into tortillas, roll them tightly, and place seam-side down in a greased baking dish.
  4. In a saucepan, combine granulated sugar, water, and 2 tbsp butter. Bring to a boil, then simmer for 3–4 minutes.
  5. Pour syrup over the enchiladas and let soak for a few minutes.
  6. Bake uncovered at 350°F (175°C) for 20–25 minutes until golden and bubbling.
  7. Let cool slightly before serving. Top with extra apples, whipped cream, or ice cream if desired.
