Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 large eggs

1/2 cup milk

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups chopped apples (Granny Smith or Honeycrisp work great)

1/3 cup brown sugar

2 tablespoons all-purpose flour

1/2 teaspoon ground cinnamon

2 tablespoons cold butter (cubed)

1/2 cup powdered sugar

1 tablespoon milk


Instructions

1. In a small bowl, combine brown sugar, flour, and cinnamon for the streusel. Cut in cold butter until crumbly. Set aside.

2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.

3. In another bowl, whisk eggs, milk, oil, and vanilla. Add wet to dry ingredients and mix until just combined.

4. Fold in the chopped apples evenly throughout the batter.

5. Grease a 9×5 inch loaf pan. Pour in half the batter, then sprinkle half the streusel. Repeat with remaining batter and streusel.

6. Bake at 350°F (175°C) for 55–65 minutes. Toothpick should come out clean.

7. Cool completely. Whisk together powdered sugar and milk to make glaze, then drizzle over the top.

Notes

Let the loaf cool completely before adding the glaze, or it will melt into the streusel.

Use firm, tart apples like Granny Smith for the best texture and flavor contrast.
