Ingredients
170 g unsalted butter melted and slightly cooled
200 g granulated sugar
3 large eggs room temperature
240 ml whole milk room temperature
240 g all purpose flour
2 teaspoons baking powder
0.5 teaspoon fine sea salt
2 teaspoons ground cardamom preferably freshly ground from pods
1 teaspoon vanilla extract
2 tablespoons powdered sugar for dusting optional
Instructions
1. Preheat the oven to 350°F 175°C. Grease a 9 inch 23 cm round cake pan with butter, line the bottom with parchment paper, and lightly flour the sides.
2. In a medium bowl whisk together the flour, baking powder, salt, and ground cardamom until well combined. Set aside.
3. In a large mixing bowl whisk the granulated sugar and eggs for 2 to 3 minutes until the mixture looks pale and slightly thickened.
4. Slowly pour in the melted butter while whisking so it fully blends into the egg mixture. Whisk in the milk and vanilla extract until the batter is smooth.
5. Using a spatula gently fold the dry ingredients into the wet mixture in two additions, mixing just until no streaks of flour remain. Do not overmix.
6. Pour the batter into the prepared pan and smooth the top with a spatula.
7. Bake for 30 to 38 minutes or until the top is deep golden and a toothpick inserted in the center comes out with just a few moist crumbs.
8. Let the cake cool in the pan for 10 minutes, then run a thin knife around the edge and invert onto a wire rack. Peel off the parchment and let cool completely.
9. Once cooled dust the top with powdered sugar, slice into wedges, and serve.
