Ingredients

2 pounds beef chuck roast, cut into 1-inch cubes

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

4 cups beef broth

1 tablespoon Worcestershire sauce

3 large carrots, peeled and sliced

2 cups butternut squash, cubed

3 medium potatoes, diced

2 bay leaves

4 sprigs fresh thyme

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large Dutch oven over medium-high heat. Sear beef cubes in batches until browned. Set aside.

2. In the same pot, sauté onions until soft. Add garlic and tomato paste. Cook for 1-2 minutes until fragrant.

3. Deglaze with beef broth and Worcestershire sauce, scraping the bottom of the pot.

4. Return beef to the pot. Add carrots, squash, potatoes, thyme, bay leaves, salt, and pepper.

5. Cover and simmer on low heat for 2.5 to 3 hours, stirring occasionally, until beef and vegetables are tender.

6. Remove thyme stems and bay leaves. Adjust seasoning if needed.

7. Let rest for 10 minutes before serving.

Notes

For an extra depth of flavor, add a splash of red wine when deglazing the pot.

This stew thickens as it sits—add a little broth or water when reheating.
