Ingredients
4 boneless skinless chicken breasts
2 apples, thinly sliced (Honeycrisp or Gala recommended)
1 large red onion, thinly sliced
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
3/4 cup chicken broth
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 tablespoon unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat olive oil and butter in a large skillet over medium-high heat.
3. Sear the chicken for 5–6 minutes per side until golden brown. Remove and set aside.
4. Add sliced red onions to the skillet and cook for 5–7 minutes until caramelized.
5. Stir in the minced garlic and cook for 1 more minute.
6. Add sliced apples and thyme, sauté for 2–3 minutes until just softened.
7. Pour in the chicken broth and Dijon mustard, stirring to combine.
8. Let the sauce simmer for 3–4 minutes until slightly reduced.
9. Return the chicken to the skillet, cover, and simmer for another 5–8 minutes until fully cooked.
10. Serve hot, garnished with more thyme if desired.
Notes
For extra fall flavor, deglaze the pan with apple cider instead of broth.
