Ingredients

1 lb boudin sausage (casings removed)

1 cup cooked rice (if needed for firmness)

1/4 cup chopped green onions

2 tbsp chopped parsley

1/2 tsp garlic powder

1/2 tsp Cajun seasoning

2 eggs (beaten)

1 1/2 cups panko breadcrumbs (divided)

Nonstick cooking spray or olive oil spray

Optional Dipping Sauce:

1/2 cup mayonnaise

2 tbsp Dijon mustard

1 tbsp ketchup

1 tsp hot sauce

1/2 tsp paprika

Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Remove boudin sausage from casings and place in a large bowl.
  3. Mix in green onions, parsley, garlic powder, Cajun seasoning, and cooked rice if needed.
  4. Shape mixture into golf ball-sized rounds.
  5. Beat the eggs in a small bowl and place panko in another.
  6. Dip each ball in egg, then roll in panko to coat.
  7. Place on baking sheet and spray lightly with cooking spray.
  8. Bake for 20–25 minutes, turning halfway through, until golden and crisp.
  9. For sauce: mix mayo, mustard, ketchup, hot sauce, paprika, salt, and pepper.
  10. Serve hot with dipping sauce on the side.
