Ingredients
1 cup grated sweet potato
1 cup grated zucchini (squeezed dry)
1 cup shredded cheddar cheese
1 large egg
1/3 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
olive oil spray (for baking)
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Peel and grate the sweet potato. Grate the zucchini and squeeze out excess moisture with a clean towel.
3. In a bowl, combine the sweet potato, zucchini, cheddar cheese, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
