Ingredients

2 medium zucchini

2 large eggs

0.75 cup grated Parmesan cheese

0.25 cup breadcrumbs (optional)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

0.5 teaspoon salt

0.25 teaspoon black pepper

Olive oil spray

Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

2. Slice zucchini into sticks about 3–4 inches long and ½ inch thick. Pat dry.

3. Beat the eggs in a shallow bowl.

4. In another bowl, combine Parmesan, breadcrumbs (if using), garlic powder, Italian seasoning, salt, and pepper.

5. Dip zucchini sticks into the egg, then coat with the Parmesan mixture, pressing gently to adhere.

6. Place coated sticks on the baking sheet and lightly spray with olive oil.

7. Bake for 20–25 minutes, flipping halfway, until golden and crisp.

8. Serve warm with your favorite dipping sauce.

Notes

Patting the zucchini dry is essential for achieving a crispy texture.

For extra crispiness, broil the fries for the last 2 minutes of baking.
