Ingredients
1 to 1.5 pounds pork tenderloin
1/4 cup balsamic vinegar
2 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 tablespoon fresh rosemary, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. In a bowl, mix balsamic vinegar, olive oil, garlic, mustard, brown sugar, rosemary, salt, and pepper.
2. Place pork in a bag or dish and pour marinade over it. Cover and refrigerate at least 1 hour or overnight.
3. Optional: Sear pork in a hot skillet for 2–3 minutes per side to create a crust.
4. Preheat oven to 400°F (200°C). Place pork and marinade in a baking dish.
5. Roast for 20–25 minutes or until internal temp reaches 145°F.
6. Let rest 5–10 minutes before slicing. Spoon pan juices over slices and serve.
Notes
Letting the pork rest after roasting locks in the juices and keeps every bite moist.
Use a meat thermometer to avoid overcooking—145°F is perfect.
