Whether you need quick weeknight meals, easy dinner recipes, or new comfort food ideas, this cheesy, saucy meatloaf delivers rich flavor in every bite. Ideal for family dinners or leftovers, it’s a cozy classic made even better.

Ingredients

2 pounds ground beef

1 cup shredded sharp cheddar cheese

1 cup BBQ sauce (divided)

1 cup breadcrumbs

2 large eggs

1/3 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons chopped parsley

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

1. Preheat oven to 350°F (175°C).

2. In a large bowl, combine ground beef, cheddar cheese, 1/2 cup BBQ sauce, breadcrumbs, eggs, milk, onion, garlic, parsley, salt, and pepper.

3. Mix gently with your hands until just combined—avoid overmixing.

4. Shape the mixture into a loaf and place on a lined baking sheet or into a loaf pan.

5. Bake uncovered for 45 minutes.

6. Remove from the oven and brush remaining BBQ sauce over the top.

7. Return to oven and bake for another 15 minutes, until internal temperature reaches 160°F.

8. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, use a smoked cheddar or chipotle BBQ sauce.

Letting the meatloaf rest before slicing is key to keeping it moist.
