Ingredients

1 pound ground beef

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning

1 can (14.5 ounces) diced tomatoes

1 can (8 ounces) tomato sauce

3 cups beef broth

1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) corn, drained

1 can (4 ounces) diced green chiles

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese, for serving

1/2 cup sour cream, for serving

2 tablespoons chopped cilantro, for serving

1 cup crushed tortilla chips, for serving


Instructions

1. In a skillet over medium heat, cook the ground beef with the diced onion until the beef is browned and the onion is softened. Drain excess grease.

2. Stir in the minced garlic and cook for 30 seconds, just until fragrant.

3. Transfer the beef mixture to the crockpot.

4. Add the taco seasoning, diced tomatoes, tomato sauce, beef broth, black beans, kidney beans, corn, and green chiles.

5. Stir everything together well.

6. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

7. Taste and season with salt and black pepper.

8. Ladle into bowls and top with shredded cheddar cheese, sour cream, chopped cilantro, and crushed tortilla chips before serving.

Notes
