Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, chopped

3 cloves garlic, minced

1 tablespoon tomato paste

28 ounces crushed tomatoes

5 cups chicken broth

1 teaspoon Italian seasoning

1 teaspoon dried basil

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish


Instructions

1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.

2. Stir in the chopped onion and garlic. Cook until softened and fragrant.

3. Add the tomato paste and stir for 1 minute. Then add the crushed tomatoes, Italian seasoning, and basil.

4. Pour in chicken broth and bring the soup to a boil. Add broken lasagna noodles.

5. Simmer for 12–15 minutes, stirring occasionally, until noodles are cooked al dente.

6. In a small bowl, mix ricotta, mozzarella, and Parmesan.

7. Serve soup hot with a generous scoop of cheese mixture and garnish with fresh basil or parsley.

Notes

To avoid mushy noodles in leftovers, cook them separately and add when serving.

Swap beef for Italian sausage for extra flavor depth.
