1/3 cup mayonnaise

1/3 cup sour cream

1/2 cup Cotija cheese (or feta), crumbled

1/4 cup diced jalapeños

1/4 cup diced green onions

1/2 cup Ro-Tel (diced tomatoes and green chilies), drained

1 tbsp lime juice

1 tsp chili powder

1/4 tsp salt

1/4 tsp black pepper

2 tbsp chopped cilantro (plus more for garnish)

Instructions

1. Let the cream cheese sit at room temperature until softened.

2. In a large bowl, mix cream cheese, mayonnaise, and sour cream until smooth.

3. Stir in corn, jalapeños, green onions, Ro-Tel, lime juice, and Cotija cheese.

4. Season with chili powder, salt, and pepper. Adjust to taste.

5. For cold dip, refrigerate for 1 hour. For hot dip, bake at 350°F for 20 minutes.

Notes

For smoky depth, use fire-roasted corn or grill fresh corn before mixing.

Make ahead and chill for parties—flavor intensifies overnight.
