Ingredients
115g unsalted butter
200g light brown sugar
120g Biscoff cookie butter
2 large eggs
1 tsp vanilla extract
130g all-purpose flour
1/2 tsp salt
100g white chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. Melt butter, then stir in brown sugar and Biscoff spread until smooth. Let it cool slightly.
3. Whisk in eggs and vanilla extract until fully combined.
4. Fold in flour and salt, mixing just until no dry flour remains.
5. Gently stir in most of the white chocolate chips, reserving a few for topping.
6. Pour the batter into the pan, spread evenly, and sprinkle remaining chips on top.
7. Bake for 25–30 minutes, or until edges are golden and a toothpick comes out with moist crumbs.
8. Cool completely before slicing and serving.
Notes
Don’t overbake — they should still be slightly soft in the center when removed from the oven.
For extra gooeyness, swirl an extra spoonful of Biscoff spread on top before baking.
