Ingredients
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
2 cups sweet corn (fresh, frozen, or canned)
2 cups potatoes, diced (Yukon Gold or Russet)
1 cup onion, diced
1 cup celery, diced
3 cloves garlic, minced
1 1/2 cups heavy cream
4 cups chicken broth
1 tablespoon Cajun or blackening seasoning
1/2 cup green onions, sliced
Salt and black pepper to taste
1 tablespoon olive oil (for searing shrimp)
Instructions
1. Cook the chopped bacon in a large pot until crispy. Remove and set aside, leaving the grease.
2. Sauté diced onion and celery in the bacon grease for 5 minutes. Add garlic and cook for another minute.
3. Add potatoes and corn. Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
4. Stir in the heavy cream and season with salt and pepper. Simmer gently to thicken.
5. Toss shrimp with Cajun seasoning. Sear in a hot skillet with olive oil for about 2 minutes per side.
6. Stir cooked shrimp and half the bacon into the chowder. Simmer briefly.
7. Serve hot, topped with remaining bacon and green onions.
Notes
