Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

0.25 teaspoon baking soda

0.5 teaspoon salt

2 tablespoons granulated sugar

0.5 cup unsalted butter, cold and cubed

0.75 cup buttermilk, cold

1 teaspoon vanilla extract

1 cup blueberries (fresh or frozen)

0.75 cup powdered sugar

1.5 tablespoons milk (for glaze)

Instructions

1. Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

3. Cut in cold butter until mixture resembles coarse crumbs.

4. Stir in buttermilk and vanilla until just combined—do not overmix.

5. Toss blueberries with a bit of flour and gently fold into the dough.

6. Pat dough into 1-inch thickness, fold a few times for layers, then cut with a biscuit cutter.

7. Place biscuits on baking sheet and bake for 14–18 minutes until golden brown.

8. Mix powdered sugar and milk to make glaze. Drizzle over warm biscuits before serving.

Notes

Keep ingredients cold for the flakiest layers.

Add lemon zest to the glaze for a citrusy finish.
