1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
2 large eggs
100g granulated sugar
70g brown sugar
1 tsp vanilla extract
50g granulated sugar (for rolling)
60g powdered sugar (for coating)
Instructions
1. Brown the butter in a saucepan over medium heat until golden and nutty. Let cool for 15 minutes.
2. In a bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.
3. Add both sugars to the cooled butter and whisk. Then add eggs and vanilla, mixing well.
4. Slowly incorporate the dry ingredients into the wet, stirring until combined. Chill dough for 30 minutes.
5. Preheat oven to 350°F (175°C). Roll dough into 1-inch balls, coat in granulated sugar, then powdered sugar.
6. Place on parchment-lined baking sheet, spacing 2 inches apart. Bake for 10–12 minutes until crinkled and set.
7. Cool for 5 minutes on the tray before transferring to a wire rack.
