Ingredients
113g unsalted butter
170g dark chocolate chips
150g granulated sugar
2 large eggs
1 tsp vanilla extract
30g unsweetened cocoa powder
60g all-purpose flour
1/4 tsp salt
120g creamy peanut butter
60g unsalted butter
150g powdered sugar
2 tbsp heavy cream (or milk)
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. Melt the butter and dark chocolate together until smooth. Let it cool slightly.
3. In a bowl, whisk sugar, eggs, and vanilla until light and frothy.
4. Add in melted chocolate and stir to combine.
5. Sift in cocoa powder, flour, and salt. Mix until a thick batter forms.
6. Scoop onto baking sheets and flatten slightly. Bake for 10–12 minutes until crackled on top.
7. Cool cookies on wire racks completely.
8. For frosting, beat peanut butter and butter until smooth.
9. Add powdered sugar and beat until fluffy. Add cream and vanilla until smooth.
10. Pipe frosting on flat side of a cookie and sandwich with another.
11. Repeat with remaining cookies and serve or store.
