Ingredients

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, cut into chunks

12 oz smoked andouille sausage, sliced into rounds

1 teaspoon Cajun seasoning (plus extra to taste)

Salt and black pepper, to taste

3 cloves garlic, minced

1/2 medium onion, diced

1 cup chicken broth

1/2 cup heavy cream

8 oz rotini or penne pasta

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  2. In the same skillet, add sausage slices. Sear for 2–3 minutes until browned. Remove and set aside with chicken.
  3. Reduce heat to medium, add the remaining olive oil, and sauté onion for 3–4 minutes until soft. Add garlic and stir for 30 seconds.
  4. Pour in chicken broth, scraping the pan to deglaze. Add heavy cream and stir. Bring to a simmer.
  5. Stir in uncooked pasta. Cover and cook on low-medium heat for 12–15 minutes, stirring occasionally, until pasta is tender.
  6. Return chicken and sausage to the skillet. Stir everything together. Add Parmesan and adjust Cajun seasoning to taste.
  7. Garnish with chopped parsley and serve hot.
