5 medium Yukon Gold or Russet potatoes, peeled and diced

1 tablespoon olive oil or butter

1 small onion, finely chopped

2 celery stalks, diced

2 carrots, peeled and chopped

3 garlic cloves, minced

4 cups vegetable or chicken broth

1 cup milk or dairy-free alternative (unsweetened)

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon dried thyme

1/2 teaspoon black pepper

Salt to taste

Optional: chopped green onions or parsley for garnish


Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add onion, celery, and carrots. Cook for 5–7 minutes until vegetables soften.
  2. Stir in garlic and cook for 1–2 minutes until fragrant.
  3. Add paprika, cayenne, thyme, black pepper, and salt. Mix well to coat the veggies.
