Ingredients

1 lb ground beef

3 cups potatoes, peeled and diced

1 cup carrots, diced

1/2 cup celery, chopped

1 small onion, finely chopped

3 cups chicken broth

2 cups milk

2 cups shredded cheddar cheese

3 tbsp butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried basil

1/2 tsp dried parsley


Instructions

  1. Cook the beef – In a large pot, cook the ground beef over medium heat until browned. Drain excess grease and set aside.
  2. Sauté the vegetables – In the same pot, melt the butter and add the onions, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Add the potatoes and broth – Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  4. Thicken the soup – In a small bowl, whisk together the flour and milk until smooth. Slowly stir it into the soup, allowing it to thicken. Cook for an additional 5 minutes.
  5. Add cheese and seasonings – Stir in the cheddar cheese, cooked beef, garlic powder, salt, pepper, basil, and parsley. Stir continuously until the cheese is melted and the soup is creamy.
