Ingredients

1 pound fresh strawberries, large and ripe

8 oz cream cheese, softened

1/4 cup powdered sugar (adjust to taste)

1/2 teaspoon vanilla extract

1/4 cup graham cracker crumbs

1 tablespoon melted butter


Instructions

  1. Rinse the strawberries and pat dry. Cut off the tops and hollow out the centers.
  2. In a bowl, beat the softened cream cheese until smooth.
  3. Add powdered sugar and vanilla extract. Beat until light and fluffy.
  4. Fill a piping bag (or zip-top bag with snipped corner) with the cheesecake mixture.
  5. Pipe the filling into each hollowed strawberry.
  6. Mix graham cracker crumbs with melted butter.
  7. Sprinkle crumb mixture over the filled strawberries.
  8. Chill in the fridge for 20–30 minutes before serving.
