Ingredients
1 pound ground beef
3 cups diced russet potatoes
2 cups shredded sharp cheddar cheese
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
4 tablespoons butter
1/4 cup all-purpose flour
3 cups chicken broth
2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Instructions
1. In a large pot, melt butter over medium heat. Add onions, carrots, and celery. Sauté until soft, about 5 minutes.
2. Add garlic and cook for another minute until fragrant.
3. Add ground beef. Cook until browned and no longer pink. Drain excess fat.
4. Sprinkle flour over the mixture. Stir and cook for 2 minutes to remove raw flour taste.
5. Slowly add chicken broth while stirring to prevent lumps. Add milk and bring to a gentle simmer.
6. Stir in diced potatoes. Simmer uncovered for 15–20 minutes, or until tender.
7. Reduce heat to low. Stir in cheddar cheese, salt, pepper, and paprika until cheese is melted and soup is creamy.
8. Serve warm, garnished with extra cheese or parsley if desired.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot before adding cheese.
