Ingredients

2 cups cubed butternut squash

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 pound ground sausage

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

6 fresh sage leaves


Instructions

1. Preheat oven to 400°F. Toss butternut squash with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes until tender and lightly browned.

2. While squash is roasting, cook ground sausage in a skillet over medium heat until browned. Drain excess grease.

3. In a mixing bowl, combine roasted squash, cooked sausage, mozzarella, and half of the Parmesan. Mix well.

4. Transfer to a greased baking dish. Sprinkle with remaining Parmesan and top with sage leaves.

5. Bake at 375°F for 20 minutes until cheese is bubbly and golden. Serve hot.
