Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, cubed

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

8 oz rotini pasta

2 cups broccoli florets

1 packet ranch seasoning mix

1 cup milk

1/2 cup heavy cream

2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese (optional)

Fresh parsley (optional, for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Add rotini and cook as directed. In the last 2–3 minutes, add broccoli. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken, season with garlic powder, onion powder, salt, and pepper. Cook 6–8 minutes until golden and cooked through.
  3. Sprinkle ranch seasoning over the chicken. Pour in milk and heavy cream. Stir and bring to a light simmer.
  4. Lower heat and slowly add cheddar and Parmesan cheese, stirring until fully melted and smooth.
  5. Add the cooked pasta and broccoli to the skillet. Mix well to coat everything in the creamy cheese sauce.
  6. Simmer for 1–2 more minutes. Garnish with parsley if using, and serve hot.
