Ingredients

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 can (28 ounces) crushed tomatoes

1 teaspoon Italian seasoning

0.5 teaspoon salt

0.25 teaspoon black pepper

1 package (9 ounces) cheese tortellini

0.75 cup heavy cream

0.5 cup grated Parmesan cheese

2 tablespoons chopped fresh basil or parsley (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until soft, about 3-4 minutes.

2. Stir in minced garlic and cook for another 30 seconds until fragrant.

3. Pour in crushed tomatoes and broth. Stir in Italian seasoning, salt, and pepper. Bring to a simmer for 5-7 minutes.

4. Add cheese tortellini and cook until they float and are tender, about 5-6 minutes.

5. Reduce heat. Stir in heavy cream and Parmesan cheese until fully melted and smooth.

Notes

For a heartier version, add cooked Italian sausage or spinach before simmering.

If using frozen tortellini, adjust the cook time to 8–10 minutes.
