Ingredients
2 cups graham cracker crumbs
1/2 cup granulated sugar
1/2 cup melted butter
16 oz cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup granulated sugar (for filling)
1 can cherry pie filling (21 oz)
Instructions
1. Preheat oven to 325°F (163°C) and line a 9×13 inch pan with parchment paper.
2. Mix graham cracker crumbs, 1/2 cup sugar, and melted butter. Press into the pan to form the crust.
3. Bake the crust for 8–10 minutes until lightly golden.
4. Beat cream cheese and 1/2 cup sugar until smooth.
5. Add eggs one at a time, mixing gently, then stir in vanilla.
6. Pour cheesecake filling over the crust and spread evenly.
7. Bake for 30–35 minutes or until the center is set.
8. Let cool completely at room temperature, then refrigerate for 3 hours.
9. Spread cherry pie filling on top before serving.
10. Slice with a clean knife and serve chilled.
Notes
For a cleaner cut, chill the bars overnight and wipe your knife between each slice.
