Ingredients

1 ½ cups old-fashioned rolled oats

1 cup finely diced apple (Honeycrisp or Gala recommended)

½ cup natural almond butter (or peanut butter)

⅓ cup maple syrup

1 ½ teaspoons ground cinnamon

1 teaspoon vanilla extract

Pinch salt

Instructions

1. Line an 8×8 inch baking pan with parchment paper, letting some overhang for easy removal.

2. In a large mixing bowl, stir together almond butter, maple syrup, vanilla, and salt until smooth.

3. Add oats, cinnamon, and finely diced apple. Stir until well combined.

4. Press the mixture firmly into the prepared pan in an even layer.

5. Refrigerate for 1–2 hours or until set.

6. Slice into bars and store in an airtight container in the fridge or freezer.

Notes

For best results, dice the apple as small as possible so it blends into the mixture smoothly.

These bars can be wrapped individually and frozen for a perfect on-the-go breakfast.
