Ingredients

2 large boneless, skinless chicken breasts (cut into 1-inch cubes)

12 slices of bacon (cut into thirds)

2 cups fresh pineapple chunks

1 red bell pepper (cut into 1-inch pieces)

1/4 cup olive oil

2 tbsp soy sauce

2 tbsp honey

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Skewers (metal or soaked wooden skewers)

Fresh parsley for garnish (optional)


Instructions

  1. In a bowl, whisk together olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper.
  2. Add chicken cubes to the marinade and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes.
  4. Wrap a piece of bacon around each chicken cube.
  5. Thread onto skewers in this order: bacon-wrapped chicken, pineapple chunk, bell pepper piece. Repeat.
  6. Preheat grill to medium-high heat.
  7. Grill kebabs for 10–12 minutes, turning occasionally, until chicken is cooked and bacon is crisp.
  8. Remove from heat, garnish with parsley, and serve hot.
