Ingredients

1 pound ground chicken

3 cups coleslaw mix

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

2 tablespoons soy sauce

1 teaspoon sesame oil

1 pack egg roll wrappers

2 green onions, sliced

2 cups vegetable oil (for frying)

2 tablespoons water (for sealing)


Instructions

1. Heat a large skillet over medium-high heat. Add ground chicken and cook until no longer pink, breaking it up as it cooks.

2. Stir in garlic and ginger. Cook for 1 minute until fragrant.

3. Add soy sauce, sesame oil, and coleslaw mix. Stir-fry until slightly softened. Add green onions and remove from heat. Let cool slightly.

4. Place an egg roll wrapper on a flat surface, corner facing you. Add 2-3 tablespoons of filling near the bottom.

5. Fold the bottom corner over the filling, then fold in the sides. Roll tightly and seal the edge with water.

6. Repeat with remaining wrappers and filling.

7. Heat oil in a deep skillet to 350°F. Fry egg rolls in batches for 3-4 minutes, turning until golden.

8. Remove and drain on paper towels. Serve with dipping sauce.

Notes

To prevent bursting, don’t overfill the wrappers.

For a lighter version, bake at 400°F for 15-18 minutes, flipping halfway.
