Ingredients
1 pound cooked chicken (diced or shredded)
3 cups cold cooked rice
1 cup frozen peas and carrots
2 large eggs
3 tablespoons soy sauce
1 teaspoon sesame oil
2 cloves garlic (minced)
2 tablespoons vegetable oil
salt and pepper (to taste)
2 tablespoons sliced green onions (optional, for garnish)
Instructions
1. Heat 1 tablespoon oil in a skillet or wok over medium-high heat. Add diced chicken, season lightly, and cook until golden. Set aside.
2. In the same pan, add a bit more oil and scramble the eggs until just set. Push to one side.
3. Add peas and carrots. Stir-fry for 2–3 minutes until heated through.
4. Add rice and break up clumps. Stir everything together and cook for 3–4 minutes.
5. Return chicken to skillet. Add soy sauce and sesame oil. Toss until well combined.
6. Adjust seasoning with salt and pepper as needed.
7. Garnish with sliced green onions if using.
8. Serve hot and enjoy!
Notes
Use day-old rice for best texture and less clumping.
Swap chicken with shrimp, tofu, or pork for variations.
