Ingredients
400g ground chicken
1 small onion, grated
2 cloves garlic, minced
3 tablespoons chopped parsley
1/4 cup breadcrumbs
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil (for cooking)
3/4 cup Greek yogurt
1 clove garlic, minced (for yogurt)
1 tablespoon olive oil (for yogurt)
1 teaspoon lemon juice
Salt to taste (for yogurt)
Instructions
1. In a bowl, mix ground chicken, onion, garlic, parsley, breadcrumbs, cumin, coriander, paprika, salt, and pepper until just combined.
2. Shape mixture into 10–12 small log-shaped koftas using damp hands.
3. Heat olive oil in a skillet over medium-high heat and sear koftas for 3–4 minutes per side until golden brown and fully cooked.
4. In a separate bowl, mix Greek yogurt with garlic, olive oil, lemon juice, and salt to taste.
5. Spread garlic yogurt onto a serving plate and top with cooked koftas.
6. Garnish with additional parsley and drizzle olive oil if desired.
Notes
Don’t overmix the kofta mixture to keep them tender.
Chilling the koftas for 15 minutes before cooking helps them hold shape better.
