Ingredients

2 chicken breasts, sliced

4 cloves garlic, minced

4 tablespoons butter

1 tablespoon olive oil

2 tablespoons lemon juice

1 cup chicken broth

1/4 teaspoon red pepper flakes

2 tablespoons chopped fresh parsley

1 cup long grain white rice

1/4 cup grated Parmesan cheese

2 cups chicken broth (for rice)

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. In a saucepan, combine rice and 2 cups chicken broth. Bring to a boil, reduce to low, cover, and cook 15 minutes until tender.

2. Stir butter, Parmesan, salt, and pepper into the rice. Cover and keep warm.

3. Season chicken with salt and pepper. Heat olive oil in skillet over medium-high heat.

4. Sear chicken for 3–4 minutes per side until golden and fully cooked. Set aside.

5. In the same skillet, melt butter. Add garlic and sauté 1 minute.

6. Stir in chicken broth, lemon juice, and red pepper flakes. Simmer 2–3 minutes.

7. Return chicken to skillet and spoon sauce over top. Simmer 2 more minutes.

8. Serve chicken over garlic Parmesan rice, drizzle with sauce, and garnish with parsley.

Notes

You can swap the rice for orzo or cauliflower rice for a twist.

Adjust the red pepper flakes based on your spice preference.
