Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons butter

3 cups fresh baby spinach

2 cups cremini or white mushrooms, sliced

4 garlic cloves, minced

1/2 cup chicken broth

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Fresh lemon juice (optional)


Instructions

  1. Pat chicken breasts dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes on each side until golden and nearly cooked through. Remove and set aside.
  3. In the same skillet, melt the butter. Add mushrooms and cook undisturbed for 3-4 minutes. Stir and continue cooking until tender.
  4. Add minced garlic and cook for 30 seconds. Add spinach in batches, stirring until wilted.
  5. Pour in chicken broth and scrape the bottom of the pan. Simmer for 2-3 minutes.
  6. Return chicken to the skillet. Spoon sauce over the top and simmer covered for 5-7 minutes, until chicken is fully cooked.
  7. (Optional) Add a squeeze of lemon juice before serving.
  8. Serve hot with your favorite side.
