4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
3 cups fresh baby spinach
2 cups cremini or white mushrooms, sliced
4 garlic cloves, minced
1/2 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
Fresh lemon juice (optional)
Instructions
- Pat chicken breasts dry and season with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes on each side until golden and nearly cooked through. Remove and set aside.
- In the same skillet, melt the butter. Add mushrooms and cook undisturbed for 3-4 minutes. Stir and continue cooking until tender.
- Add minced garlic and cook for 30 seconds. Add spinach in batches, stirring until wilted.
- Pour in chicken broth and scrape the bottom of the pan. Simmer for 2-3 minutes.
