Ingredients

2 cups cooked, shredded chicken (rotisserie works great)

1 can black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 can diced tomatoes with green chilies, drained

1 packet taco seasoning

1 cup salsa (your favorite variety)

1 1/2 cups shredded cheddar cheese

1 cup crushed tortilla chips (plus more for serving)

1 avocado, diced (optional for topping)

1/2 cup sour cream (optional for topping)

Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and salsa until well combined.
  3. Lightly grease a 9×13-inch baking dish. Layer the bottom with crushed tortilla chips.
  4. Spread the chicken mixture evenly over the chips.
