Ingredients
4 boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 1/2 cups shredded cheddar cheese
1/4 cup diced tomatoes (optional)
2 tablespoons chopped parsley (optional)
Instructions
1. Pat the chicken breasts dry and season both sides with salt and pepper.
2. Heat olive oil in a skillet over medium heat. Sear the chicken until golden and fully cooked (internal temp of 165°F). Remove and set aside.
3. In the same pan, melt butter and sauté garlic for 1 minute.
4. Sprinkle in flour and whisk to form a roux.
5. Gradually pour in the milk, whisking to prevent lumps. Cook until slightly thickened.
6. Reduce heat and stir in shredded cheddar until melted and smooth.
7. Return chicken to the pan and spoon sauce over it.
8. Heat through for 2–3 minutes. Top with tomatoes and parsley if using.
Notes
For extra creaminess, use freshly grated cheese instead of pre-shredded.
Add a splash of chicken broth if you want a thinner sauce.
