Ingredients

4 cups of day-old bread, cubed (brioche or French bread)

2 ripe bananas, sliced

1 cup semi-sweet chocolate chips or chunks

2 cups whole milk (or half-and-half)

3 large eggs

1/2 cup granulated sugar

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt

Butter (for greasing the dish)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a medium baking dish or ramekins with butter.
  2. In a large bowl, combine bread cubes, banana slices, and half the chocolate chips. Transfer to the greased dish.
  3. In a separate bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt.
  4. Pour the custard mixture over the bread. Press down gently to soak. Let sit for 10 minutes.
  5. Sprinkle the remaining chocolate chips on top.
  6. Bake for 35–40 minutes, or until golden and set.
  7. Cool slightly before serving. Top with whipped cream or ice cream if desired.
