Ingredients
For the Crust:
1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
2 tablespoons sugar
¼ teaspoon salt
3–4 tablespoons ice water
For the Chocolate Filling:
2 cups whole milk
½ cup heavy cream
¾ cup granulated sugar
¼ cup unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
3 large egg yolks
4 ounces semi-sweet chocolate, chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Whipped Topping:
1 ½ cups heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
For Garnish:
Fresh cherries, with stems

Instructions
- Prepare the Crust: Mix flour, sugar, and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs. Add ice water gradually until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the dough to fit a 9-inch pie pan. Press it into the pan, trim edges, and prick the bottom with a fork. Line with parchment paper, add pie weights, and bake for 15 minutes. Remove weights and bake for another 5-7 minutes until golden. Cool completely.
- Make the Chocolate Filling: In a saucepan, whisk together milk, heavy cream, sugar, cocoa powder, cornstarch, and salt over medium heat until thickened (about 5-7 minutes). In a bowl, whisk egg yolks and gradually temper them by adding some hot mixture while whisking. Pour yolk mixture back into the saucepan and cook for 2-3 more minutes.
- Remove from heat and stir in chopped chocolate, butter, and vanilla extract until smooth. Pour the filling into the cooled crust, smooth the top, and cover with plastic wrap pressed directly on the surface. Chill for at least 4 hours.
- Prepare the Whipped Topping: In a bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Spread over the chilled pie.
- Garnish & Serve: Top with fresh cherries and chocolate shavings. Slice and serve chilled.
