Ingredients

3 to 4 pork sausages

2 pounds Yukon Gold potatoes

4 tablespoons butter

1/2 cup milk

2 large yellow onions

2 tablespoons all-purpose flour

2 cups beef stock

1 tablespoon chopped parsley (optional)

Salt and pepper to taste


Instructions

1. Heat a skillet over medium heat and cook sausages until browned and fully cooked, about 15 minutes. Set aside.

2. Peel and dice potatoes. Boil in salted water for 15 minutes or until fork-tender.

3. Drain the potatoes and mash with butter and warm milk. Season with salt and pepper.

4. In the sausage skillet, add sliced onions and cook on medium-low for 10 minutes until golden and soft.

5. Sprinkle in flour and stir to coat onions.

6. Slowly whisk in beef stock and simmer for 5 to 7 minutes until thickened.

7. Return sausages to skillet and simmer in gravy for 2 more minutes.

8. Serve sausages over mashed potatoes and spoon gravy on top. Garnish with parsley if using.

Notes

Caramelizing the onions low and slow will bring out maximum sweetness and flavor.

Warm your milk before adding it to the mash for a smoother, creamier texture.
