Ingredients

3 ripe bananas

2 eggs

0.5 cup melted butter

0.5 cup brown sugar

1 teaspoon vanilla extract

0.75 cup crushed pineapple, well drained

1.75 cups all-purpose flour

1 teaspoon baking soda

0.5 teaspoon salt

0.75 cup sweetened shredded coconut (plus 1 tbsp for topping)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a large bowl, mash the bananas until mostly smooth.

3. Add eggs, melted butter, brown sugar, vanilla extract, and crushed pineapple. Mix well.

4. Stir in flour, baking soda, and salt until just combined.

5. Fold in shredded coconut, reserving 1 tablespoon for topping.

6. Pour batter into the loaf pan and sprinkle remaining coconut on top.

7. Bake for 50–60 minutes, or until a toothpick comes out clean.

8. Let cool 10 minutes in pan, then transfer to wire rack. Slice and enjoy!

Notes

Make sure the crushed pineapple is well-drained to avoid excess moisture in the loaf.

Don’t overmix the batter once you add the flour—just until combined for a tender crumb.
