Ingredients

1 pound ground beef

2 cups elbow macaroni

1 tablespoon olive oil

1 small onion, chopped

3 cloves garlic, minced

1 can (15 ounces) tomato sauce

1 can (14.5 ounces) diced tomatoes

2 tablespoons tomato paste

1 cup beef broth

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the elbow macaroni until just al dente. Drain and set aside.

2. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and ground beef, then cook until the beef is browned and the onion is soft. Drain excess grease if needed.

3. Stir in the minced garlic and cook for 30 seconds, just until fragrant.

4. Add the tomato sauce, diced tomatoes, tomato paste, beef broth, Italian seasoning, paprika, salt, and black pepper. Stir until the tomato paste is fully blended into the sauce.

5. Simmer the sauce for 8 to 10 minutes, stirring occasionally, until it thickens slightly and the flavors come together.

6. Add the cooked macaroni to the skillet and stir well so the pasta is evenly coated in the sauce.

7. Stir in the shredded cheddar cheese until melted and creamy.

8. Sprinkle with chopped fresh parsley and serve hot.

Notes

Do not overcook the macaroni before adding it to the skillet, or it can turn too soft after mixing with the hot sauce.
