1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
3 cups peeled and diced potatoes
1 cup diced carrots
1 cup chopped celery
4 cups chicken broth
1 tsp dried basil
1 tsp dried parsley
1/2 tsp black pepper
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded sharp cheddar cheese
Salt, to taste

Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat and set aside.
- In the same pot, sauté onion, carrots, and celery for about 5 minutes. Add garlic and cook for 1 more minute.
