Ingredients
1 ½ cups cottage cheese
2 medium zucchinis, thinly sliced
1 red bell pepper, diced
1 ½ cups fresh spinach
6 large eggs
1 cup shredded cheddar cheese
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried basil or thyme
Instructions
1. Preheat oven to 375°F and grease a baking dish.
2. In a skillet, sauté onions and garlic in olive oil until fragrant.
3. Add bell pepper, zucchini, and spinach. Cook until tender and moisture evaporates.
4. In a bowl, whisk eggs, cottage cheese, salt, pepper, and herbs. Stir in half the cheddar cheese.
5. Spread vegetables in the baking dish, pour egg mixture on top, and spread evenly.
6. Sprinkle the remaining cheddar cheese over the top.
7. Bake uncovered for 35–40 minutes, or until the top is golden and the center is set.
8. Cool slightly before slicing and serving.
Notes
