Ingredients

12 ounces linguine pasta

1 pound chicken breast, diced

4 tablespoons butter

4 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1/2 teaspoon red pepper flakes

1 teaspoon smoked paprika

2 tablespoons fresh parsley, chopped

1 teaspoon fresh thyme leaves

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Bring a pot of salted water to a boil. Cook linguine until al dente. Reserve 1/2 cup of pasta water, then drain.

2. Season chicken with salt, pepper, and smoked paprika. Sear in 1 tablespoon butter until golden and cooked through. Set aside.

3. In the same skillet, melt remaining butter and sauté garlic for 1 minute.

4. Stir in lemon juice, Dijon, red pepper flakes, parsley, and thyme. Cook briefly.

5. Add heavy cream and bring to a simmer. Stir in Parmesan until smooth.

6. Return chicken to the skillet and add drained pasta. Toss everything together.

7. Add reserved pasta water as needed to loosen sauce. Adjust seasoning.

8. Serve hot, garnished with extra Parmesan and parsley.

Notes

For extra creaminess, use an additional splash of cream when reheating leftovers.

This dish also works great with shrimp or leftover grilled steak.
