Ingredients

1 lb salmon, skinless and boneless

2 tbsp olive oil

2 tbsp butter

1 cup diced onion

2 cloves garlic, minced

2 stalks celery, diced

1 cup diced carrots

3 cups chicken or vegetable broth

2 cups Yukon Gold potatoes, peeled and diced

1 cup heavy cream

2 tbsp chopped fresh dill

1 tsp salt

1/2 tsp black pepper


Instructions

1. In a large pot, heat butter and olive oil over medium heat. Add onion, garlic, celery, and carrots. Sauté for 6–8 minutes until softened.

2. Pour in the broth and add the potatoes. Season with salt and pepper. Bring to a boil, then reduce to a simmer for 12–15 minutes.

3. Add salmon chunks and cook for 5–7 minutes until flaky and cooked through.

4. Lower the heat and stir in the heavy cream and fresh dill. Simmer another 2–3 minutes.

5. Taste and adjust seasoning if needed. Serve hot with crusty bread.

Notes

For a lighter version, use half-and-half instead of heavy cream.

If using canned salmon, drain well and stir it in gently near the end of cooking.
