Description
These Cranberry Brie Bites are my go-to holiday appetizer when I want something that looks impressive but takes just minutes to prep. Flaky puff pastry, creamy Brie, and sweet-tart cranberry sauce bake together into little golden cups that vanish the moment they hit the table. They’re perfect for party food ideas, holiday dinner ideas, or anytime you need an easy recipe for a cozy gathering. Ingredients
2 sheets frozen puff pastry, thawed but still cold
8 ounces Brie cheese, cut into 24 small cubes
3/4 cup whole berry cranberry sauce
1 large egg
1 tablespoon water
1 teaspoon finely chopped fresh rosemary, plus extra small sprigs for garnish (optional)
1 tablespoon honey, for drizzling (optional)
Instructions
1. Preheat the oven to 400°F (200°C). Lightly grease a 24-cup mini muffin pan or coat with baking spray.
2. On a lightly floured surface, unfold one sheet of puff pastry at a time and gently smooth out the seams. Cut each sheet into 12 equal squares to make 24 pieces total.
3. Press each puff pastry square into a mini muffin cup, letting the corners stand up to form little pastry cups.
4. Place one cube of Brie into the center of each pastry cup.
5. Spoon about 1 teaspoon of cranberry sauce over the Brie in each cup. Sprinkle a small pinch of chopped fresh rosemary on top.
6. In a small bowl, whisk together the egg and water. Brush the exposed edges of the puff pastry with the egg wash.
7. Bake for 12–15 minutes, or until the pastry is puffed and deeply golden and the Brie is melted and bubbly.
8. Let the bites cool in the pan for 5–10 minutes. Drizzle lightly with honey, garnish with rosemary sprigs if desired, and serve warm.
Notes
For the best puff and flaky layers, make sure the puff pastry stays cold while you work; if it becomes too soft or sticky, pop it back in the fridge for a few minutes before shaping and baking.
