Ingredients

For the Bread:

2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup granulated sugar

1 tbsp orange zest

3/4 cup buttermilk

1/2 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 1/2 cups fresh or frozen cranberries

For the Glaze:

1 cup powdered sugar

23 tbsp fresh orange juice


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar and orange zest by rubbing them together to release flavor.
  4. Add buttermilk, oil, eggs, and vanilla to the sugar mixture. Whisk until smooth.
  5. Pour wet mixture into dry ingredients. Stir until just combined.
  6. Fold in cranberries, reserving a few to press on top.
  7. Pour batter into pan, smooth the top, and add extra cranberries.
  8. Bake 50-60 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes in pan, then transfer to wire rack.
  10. Mix powdered sugar and orange juice to create glaze. Drizzle over cooled loaf.
