For the Bread:
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
1 tbsp orange zest
3/4 cup buttermilk
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 1/2 cups fresh or frozen cranberries
For the Glaze:
1 cup powdered sugar
2–3 tbsp fresh orange juice

- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix sugar and orange zest by rubbing them together to release flavor.
- Add buttermilk, oil, eggs, and vanilla to the sugar mixture. Whisk until smooth.
- Pour wet mixture into dry ingredients. Stir until just combined.
- Fold in cranberries, reserving a few to press on top.
- Pour batter into pan, smooth the top, and add extra cranberries.
